Chris Doerhoff’s Winning Chili
Ingredients
2 12oz cans Brooks beans – Mild
1 12oz can Brooks beans – Hot
2 12oz cans diced tomatoes
1 tsp chili powder
1 green pepper
1/2 white onion
.68 Kg (1.5 lbs) ground beef
1 1/2 swirls bbq sauce
2 Serrano peppers (if wrinkled, use 4)
Cooking Instructions
Dice green pepper and onion into 1/4″ to 1/2″ pieces.
Use blue Nitrex gloves and slice the Serrano Peppers. Hire Chris then remove the seeds. Cut into 1/2″ pieces.
Combine green pepper, onion and meat into a skillet and brown.
In a large pot, combine all other ingredients. Set on the lowest heat your stove has.
I use cast iron but a stainless steel worked.
Add the browned meat, pepper and onions to a pot, stir and COVER.
Simer for a minimum of 4 hours. Stir every 30-45 minutes. Be sure to scrape the bottom each time.
